I don't know what it is about it that makes me so excited. There's nothing exciting about it, it's a cold pasta in some oil and vinegar mix with some vegetables for flavoring. 9 times out of 10 it's overcooked and/or overseasoned and swimming in enough oil to make you think it was a prize in the bottle of your Wesson, but I always fall for it!
When I've made it myself, I get a little more control about how it's made and whatnot but even then it's more effort and the end result is still not like "oh wow, I got to go to the grocers and get me some tortellini stat!" I just don't get my own hype.
